Preparation
|
| 1. |
Shell the prawns without removing
the tails. |
| 2. |
Pour the chicken stock into a
saucepan, add the lemon grass, coriander and galangal, boil for 5
minutes. |

Add the prawns and mushrooms and
simmer until the prawns turn pink add the kiffir lime leaves,
chillies, fish sauce, lime juice and chilli paste. |

Remove from the heat and sprinkle
with coriander leaves. | |
